We collaborate with talented distillers across the country to create distinctive whiskeys that reflect our commitment to craftsmanship, sustainability, and the unique influence of geography and climate on flavor. Our releases are rooted in tradition but reimagined for a new generation of whiskey lovers. 

  • Our collaborative model allows us to work with the most talented distillers across the country, accessing unique production capabilities and regional characteristics that would be impossible to replicate in a single location. This approach lets us focus on curation, quality selection, and bringing diverse, distinctive whiskeys to our customers while supporting and learning from craft distillers nationwide. That’s not to say a distillery isn’t in our future!

  • We consider sustainability across our entire supply chain. This includes working with partners who prioritize energy efficiency, water conservation, grain sourcing practices, responsible byproduct management, and reducing their overall carbon footprint. As we grow, we're committed to increasing transparency around our sustainability initiatives and continuing to work with partners who care for the land and communities where whiskey is made, which is why we donate 1% of proceeds to organizations working on climate and social justice initiatives.

  • We specialize in American whiskeys, including a 6-year old bourbon whiskey and a bold, 10-year old wheated whiskey made in New York.  Our New York location provides unique aging conditions that influence the final character of our spirits.   • Our 6-year bourbon offers notes of cherry, almonds, apricots, and croissants with a balanced finish and velvety mouth feel. The 10-year wheated whiskey presents a softer palate with honey, ginger, orange, and clove and a smooth but spicy, lingering finish. Both reflect the terroir of their production.

  • Spirits should be stored upright in a cool, dark place, away from direct sunlight and extreme temperature fluctuations. Once opened, they can be stored for an extended period, though some subtle flavor changes may occur over time. See our blog for more information on storing your whiskey.

  • Our wheated whiskey uses wheat as the primary grain instead of corn in the mash bill (the grain recipe). This creates a softer, sweeter flavor profile with notes of vanilla, caramel, and bread, compared to the bolder and rounder  character corn brings to traditional bourbon. Our 10-year wheated whiskey showcases this gentler style while maintaining complexity from its extended aging.

  • Small-batch production means we work in limited quantities with select distillery partners, allowing for greater attention to detail and quality control throughout the distillation and aging process. This approach lets us craft distinctive flavor profiles and ensure each bottle meets our exacting standards. Our releases are often limited, making them special finds for whiskey enthusiasts.

  • Climate dramatically impacts the grains that go into your whiskey and whiskey maturation. Climate influences the quality and characteristics of the grains. Factors like temperature, rainfall, and soil composition impact the growth, starch content, and flavor development of corn, wheat, rye, and barley. For instance, grains grown in warmer, drier climates might have different sugar profiles than those from cooler, wetter regions, which can subtly alter the fermentation process and the final spirit's taste. These variations contribute to the unique "terroir" of a whiskey, laying the foundational flavors before the spirit even enters a barrel.During maturation, temperature fluctuations cause the spirit to move in and out of the barrel wood, extracting flavors, colors, and tannins. Our New York-produced bourbon and wheated whiskey experiences distinct seasonal variations compared to whiskeys aged in Kentucky or Tennessee, resulting in unique flavor characteristics. Warmer climates can accelerate aging, while cooler climates allow for more gradual, nuanced development.

  • Geography plays a crucial role in shaping whiskey flavor, influencing everything from the raw ingredients to the aging process. The local environment impacts the grains used – soil composition, climate, and rainfall in a specific region can alter the characteristics and flavor profiles of corn, wheat, rye, or barley. For instance, grains grown in limestone-rich soil, like in Kentucky, impart different notes than those from other regions. These regional differences contribute to the foundational flavors of the whiskey before it even enters a barrel, resulting in distinct characteristics like those in New Dawn's New York-produced bourbon and wheated whiskey. Water, a fundamental component of whiskey, is also geographically distinct. The mineral content and purity of the water source directly affect the mash and fermentation, contributing unique characteristics to the final spirit. Finally, the climate during maturation is vital. Different geographical locations have varying temperature and humidity levels, which dictate how the whiskey interacts with the barrel. Warmer climates can lead to more rapid extraction of flavors from the wood, while cooler, more consistent temperatures allow for slower, more nuanced development. Whiskeys produce under a lot of climate variation, extreme cold and hot temperatures, like our New York whiskey are able to benefit from the best of both worlds. This interplay of grains, water, and climate creates the distinctive regional profiles found in whiskeys worldwide.

Ordering & Shipping

  • TERMS OF SALE

    If you are an adult over the age of 21, you may make an offer to purchase alcoholic beverages using the Sites from the Licensed Retailers. Prices displayed on the Sites reflect the prices determined by the Licensed Retailers that we partner with. Licensed Retailers may choose to accept or reject any offer to purchase the Products due to lack of availability, inability to verify your age, or any other reason. If your offer to purchase the Products is declined in full or in part for any reason, you will receive a refund for any portions of your order that are declined by the Licensed Retailer.

    Licensed Retailers are solely responsible for all activities related to the sale and provision of alcoholic beverages including but not limited to (a) selecting the products to be offered for sale via the Website (b) setting the purchase price of all products made available for sale via the Site (c) accepting or rejecting all customer orders, and (d) fulfilling all customer orders, including but not limited to completing any deliveries or shipments of orders either directly or through a third party shipping company, if applicable. Accelpay, Inc. and New Dawn Distilling shall have no liability to you, any customer, or any other person for lost, unprocessed, or mishandled orders.

    Unless otherwise indicated at the time of your purchase, shipping and handling fees are NOT included with your order and such fees will be added on to the price of your purchased products. Shipping dates and/or arrival times given are only estimates. Refunds are at the sole discretion of  the licensed, third-party retailer fulfilling orders.

    The Products purchased from the Sites will be fulfilled by licensed, third-party, alcohol retail partners. As a result, title and risk of loss or damage for such products will pass to you upon our delivery to the carrier.

    Packages cannot be sent to PO boxes or local carrier locations. Orders that are placed and addressed to these locations will be rejected and refunded.

    All deliveries must be signed for by an individual who is capable of proving that they are 21 years of age or older by providing a valid form of identification at the time of delivery. If there is no individual 21 years of age or older to accept the delivery, the delivery will not be able to be completed at that time. After three failed delivery attempts, the package will be returned to the retailer. You will be required to pay an additional re-shipping fee of $25 in order to receive the package. Refunds for packages – and the associated shipping costs – that are returned to the retailers due to failed delivery attempts are at the discretion of the retailer.

    We recommend that if there is a possibility an individual 21 years of age or older is not available to sign for your package, you should contact your carrier and request the tracking number be routed to a local location that allows for package pick ups. The third party licensed alcohol retailers reserve the right to refuse delivery for any reason. Packages cannot and will not be left unattended for any reason.  New Dawn Distilling, Accelpay and its retail partners do not accept responsibility for any packages that are unable to be delivered due to issues with the delivery address that you provide for your order.

  • Our product is being shipped by a 3rd party partner (AccelPay's retailer network). 

    Orders containing alcohol are fulfilled by licensed, third-party alcohol retailers in the AccelPay network. Retailers use a variety of fulfillment carriers including GLS, UPS. etc. 

    If your order contains both alcohol and merchandise, they will be sent in separate shipments.

  • You must be 21 years of age or older to purchase alcohol from New Dawn Distilling. By placing an order, you are confirming that you are at least 21 years old.

  • By law, only individuals of 21 years and older are allowed to buy alcoholic beverages. Because the product is shipped or delivered, the carriers must make sure that the purchaser as well as the recipient, on his/her behalf, is 21 years and older. If no signature can be collected, the carrier will leave a notice for a second or third attempt or further shipping instructions. After that, the shipment will be returned to the sender at cost to the customer.

    IMPORTANT: Someone MUST be home to receive your delivery! If no one is available, the carrier will make two more attempts (usually the next day). After that, the order is returned to our retailer, which incurs additional shipping fees. To avoid this, please keep an eye out for shipping confirmation emails, tracking information and expected delivery dates. Plan ahead—if your order is returned, you’ll have two options:

    • Reship your order for $40

    • Receive a refund minus a $25 shipping fee

  • Yes, due to varying state laws regarding alcohol sales and shipping, we currently DO NOT ship to AK, HI, MS, TN, UT, and Puerto Rico. Please refer to our "Where can I find your products?" section for information on where our products are available for in-store purchase. We are working to expand our shipping capabilities in the future.

  • We accept all major credit cards, including Visa, Mastercard, American Express, and Discover. 

  • Shipping times vary depending on your location. Orders are fulfilled in 3-5 days. Standard delivery can take another 3-8 business days, depending on location. Your product will be delivered straight to your door and any order containing alcohol will require an adult signature and ID check upon delivery.

  • Unfortunately, orders cannot be edited after they are placed. If you need to cancel your order, please email support@accelpay.io before the order ships. 

  • Yes, once your order is shipped, you will receive an email with the carrier name, order and tracking number.

  • Delivery Attempts: Our delivery service will make up to three attempts to deliver the package to the intended recipient at the provided address. 

    Undeliverable Package: If the package remains undeliverable after three delivery attempts, it will be deemed “undeliverable” and returned to the retailer. 

    Recipient Responsibility: The recipient of the undeliverable package will be responsible for paying the following fees:


    • If a refund is requested, the recipient would be charged an Undeliverable Package Fee, a flat fee of $25, which will be deducted from their refund. ◆ Original shipping cost is non-refundable. 

    • If a Reshipment is requested, a flat fee of $40 will be charged to cover both the reshipment and the undeliverable package fee. 

    • Other fees may apply due to order contents.

  • Orders may be requested to be canceled until they are shipped. A request to cancel does not guarantee cancellation. Please send requests to support@accelpay.io. 

  • Orders that contain alcohol cannot be returned or exchanged. If you received the wrong item in your order, please email support@accelpay.io and we will make it right. 

  • At this time, we only ship within the United States except for AK, HI, MS, TN, UT and Puerto Rico. We are working to expand our shipping capabilities in the future.

  • Yes, we offer free shipping on 2 or more bottles. We also often have special free shipping promotions, especially during the holidays. Join the newsletter to be notified of promotions.

  • If your order arrives damaged, our team will work to make it right! Send us an email support@accelpay.io with a photo of the damaged order and we will coordinate a reshipment within 3 business days.
