This approach lets us focus on curation, quality selection, and bringing diverse, distinctive whiskeys to our customers while supporting and learning from craft distillers nationwide. That’s not to say a distillery isn’t in our future!

We consider sustainability across our entire supply chain. This includes working with partners who prioritize energy efficiency, water conservation, grain sourcing practices, responsible byproduct management, and reducing their overall carbon footprint. As we grow, we're committed to increasing transparency around our sustainability initiatives and continuing to work with partners who care for the land and communities where whiskey is made, which is why we donate 1% of proceeds to organizations working on climate and social justice initiatives.

We specialize in American whiskeys, including a 6-year old bourbon whiskey and a bold, 10-year old wheated whiskey made in New York. Our New York location provides unique aging conditions that influence the final character of our spirits. We are always experimenting with new distilleries and limited-edition releases, so be sure to check our website for the latest offerings.

Start by pouring 1-2 ounces into a tulip-shaped glass or Glencairn. Let it rest for a few minutes to open up. Observe the color, then nose the whiskey gently from different angles. Take a small sip, let it coat your palate, there will be quite a bit of heat but this first sip is to get your palate used to the burn. Nose again, noting how aromas have changed with this initial sip. Take another sip and notice the initial flavors, mid-palate development, and finish. Adding a few drops of water can help release additional aromatics and flavors. Whether you prefer it neat, with water, on the rocks, or in a cocktail, there's no wrong way to enjoy quality whiskey.

Our 6-year bourbon offers notes of cherry, almonds, apricots, and croissants with a balanced finish and velvety mouth feel. Spirits should be stored upright in a cool, dark place, away from direct sunlight and extreme temperature fluctuations. Once opened, they can be stored for an extended period, though some subtle flavor changes may occur over time. See our blog for more information on storing your whiskey.

Our wheated whiskey uses wheat as the primary grain instead of corn in the mash bill (the grain recipe). This creates a softer, sweeter flavor profile with notes of vanilla, caramel, and bread, compared to the bolder and rounder character corn brings to traditional bourbon. Our 10-year wheated whiskey showcases this gentler style while maintaining complexity from its extended aging.

Climate dramatically impacts the grains that go into your whiskey and whiskey maturation. Climate influences the quality and characteristics of the grains. Factors like temperature, rainfall, and soil composition impact the growth, starch content, and flavor development of corn, wheat, rye, and barley. For instance, grains grown in warmer, drier climates might have different sugar profiles than those from cooler, wetter regions, which can subtly alter the fermentation process and the final spirit's taste. These variations contribute to the unique "terroir" of a whiskey, laying the foundational flavors before the spirit even enters a barrel.During maturation, temperature fluctuations cause the spirit to move in and out of the barrel wood, extracting flavors, colors, and tannins. Our New York-produced bourbon and wheated whiskey experiences distinct seasonal variations compared to whiskeys aged in Kentucky or Tennessee, resulting in unique flavor characteristics. Warmer climates can accelerate aging, while cooler climates allow for more gradual, nuanced development.

For instance, grains grown in limestone-rich soil, like in Kentucky, impart different notes than those from other regions. These regional differences contribute to the foundational flavors of the whiskey before it even enters a barrel, resulting in distinct characteristics like those in New Dawn's New York-produced bourbon and wheated whiskey. Water, a fundamental component of whiskey, is also geographically distinct. The mineral content and purity of the water source directly affect the mash and fermentation, contributing unique characteristics to the final spirit. Finally, the climate during maturation is vital. Different geographical locations have varying temperature and humidity levels, which dictate how the whiskey interacts with the barrel. Warmer climates can lead to more rapid extraction of flavors from the wood, while cooler, more consistent temperatures allow for slower, more nuanced development. Whiskeys produce under a lot of climate variation, extreme cold and hot temperatures, like our New York whiskey are able to benefit from the best of both worlds. This interplay of grains, water, and climate creates the distinctive regional profiles found in whiskeys worldwide.

Yes, an adult signature (21 years or older) is required upon delivery. The carrier will not leave the package without a valid ID check. We recommend having someone available to sign for the package or arranging to pick it up at a carrier facility if you cannot be present.

Yes, due to varying state laws regarding alcohol sales and shipping, we currently DO NOT ship to AK, HI, MS, TN, UT, and Puerto Rico. Please refer to our "Where can I find your products?" section for information on where our products are available for in-store purchase. We are working to expand our shipping capabilities in the future.

Shipping times vary depending on your location. Typically, orders are processed within 1-2 business days, and delivery can take an additional 3-7 business days. You will receive a tracking number via email once your order has shipped.

If your order has not yet shipped, we may be able to update your shipping address. Please contact our customer service team at orders@newdawndistilling.com as soon as possible. Once an order has shipped, we are unable to change the delivery address.

Yes, once your order has been shipped, you will receive an email with a tracking number and a link to monitor its progress.

If a package is undeliverable due to an incorrect address, repeated failed delivery attempts, or refusal by the recipient, it will be returned to New Dawn Distilling. In such cases, the customer will be responsible for any re-shipping fees. Original shipping charges are non-refundable.

Due to the nature of our products, we generally do not accept returns unless the product is damaged or incorrect upon arrival. Please contact our customer service team at orders@newdawndistilling.com within 48 hours of receiving your order to report any issues.
